Lately all I seem to want is comfort food. For me that means things like pot pie, mashed potatoes, chicken n dumplings, bread...basically all the carbs. Especially since winter decided to show its face this week.
One of my favorite things is beef and noodles, even though I hardly ever eat it. There is this restaurant in my hometown that has the best beef and noodles that my mom and I used to go to all the time. My stomach is grumbling just thinking about it!

A few weekends ago I threw a roast in the crock pot with some veggies and herbs and decided to attempt to make my own version. Sidenote: I totally intended to use the Instant Pot to make this a lot quicker, but the roast was so big that it wouldn't fit. In fact it barely fit in the crock pot. Yay for my local grassfed beef farmer!
I call this semi-homemade because I didn't make the noodles, I sent Alan to the store for them :-) But, by all means if you are ambitious enough to make your own, go for it! I cooked my store bought noodles into some bone broth I made (you can use canned beef broth but here's a great recipe for bone broth if you're ambitious) and then stirred a tablespoon of flour into a bit of water to add to the noodles after they were cooked to thicken the sauce. I then shredded the beef and added it and the veggies to the noodle mixture. Done! Yummy beef and noodles.
