Asian Meatballs with Vegetables and Rice

With the last couple CSA pickups, we got a bunch of Napa cabbage that goes well with Asian dishes, so I thought I would make these meatballs I had seen in Working Mother magazine.

They turned out really well and were a huge hit in my house. It's always a good sign when Alan tells me I can make a new recipe again sometime :-)

I sauteed the Napa cabbage with some red pepper and onion then mixed it in with the sauce.

Asian Meatballs with Vegetables and Rice

1 lb ground beef
1 egg, beaten
1/2 c breadcrumbs
1 1/2 tsp curry powder
3/4 c vegetable broth
1 tbs butter
salt and pepper to taste
  • Combine ground beef, egg, bread crumbs, curry, salt and pepper. Form into meatballs and place into greased baking dish. Bake at 450 degrees for 25 minutes.
  • Transfer meatballs to skillet over medium-high heat (I transferred them to the skillet with the veggies I had sauteed). Add  broth and bring to a boil. Continue to boil until liquid has reduced to 1/4 c. Stir in butter and pour over cooked rice.
