Meal Planning

On another note, I'm really getting back into meal planning again. I know I've said it before, but I've started picking out several recipes from my cookbooks each week and making them. I used to rarely eat processed foods and basically ever since Ewan was born that's all we've been eating. Which has definitely contributed to my weight gain! I swore to myself that I would lose the weight I gained during pregnancy and not gain a bunch like my mom did after I was born. Well, guess what? While I did lose 40 lbs within a month of Ewan being born, I have gained about 15lbs of that back, which totally freaks me out. I know I'm not the skinniest girl to begin with, but I am close to the highest weight I've ever been and I don't want to go there again!
Ok, I will get off my tangent...The meals I've planned for the week include:

Asparagus and Swiss Cheese Quiche - I've never made a quiche before, but I made this last night and it was yummy.

Summer Vegetable Pasta - we had this tonight and it was AWESOME!

Tarragon Chicken - I've made this once before, a long time ago. From what I remember, it was pretty good.

Chicken and Beans Skillet - I keep eyeing this in my cookbook, so I decided to make it. Plus, I love Cajun food.

Gnocchi with sun-dried tomato alfredo - An old standard that Alan loves

Probably the best part of cooking is the fact that there is so much leftover to freeze for later!
