I've Been Keeping a Secret...

If you follow me on Instagram, are friends with me on Facebook or know me in person, then you already know, but I've been keeping a secret for several months now....Baby #3 is arriving in June!


When I first found out I was pregnant, I was looking forward to doing all the things I didn't do with my other two kids. Weekly bump photos and posts galore! But life had other plans. I've had several complications early on that meant I wasn't comfortable telling many people until after the anatomy scan around 20 weeks. Unfortunately this complication also meant that I have had to stop running, which honestly drives me crazy. I also had to give up on my plans to run the half marathon at Disney World in January. Coupled with being really really sick for the first half of my pregnancy, I went through a dark time for a few months after realizing the WDW half wasn't going to happen. Although I walk a few miles a week right now, I miss running. A lot. 

Let me just say that pregnant at 35 is definitely different than at 30!

I honestly don't really like taking photos of myself while pregnant, but here are the two that I have taken (aside from race photos...ahem 2016 Evv Half and Urban Bourbon).


We do know the sex and no we aren't telling. We also have no idea on a name. We cannot agree on one at all. Any suggestions? 

Semi-Homemade Beef and Noodles

Lately all I seem to want is comfort food. For me that means things like pot pie, mashed potatoes, chicken n dumplings, bread...basically all the carbs. Especially since winter decided to show its face this week.

One of my favorite things is beef and noodles, even though I hardly ever eat it. There is this restaurant in my hometown that has the best beef and noodles that my mom and I used to go to all the time. My stomach is grumbling just thinking about it! 


A few weekends ago I threw a roast in the crock pot with some veggies and herbs and decided to attempt to make my own version. Sidenote: I totally intended to use the Instant Pot to make this a lot quicker, but the roast was so big that it wouldn't fit. In fact it barely fit in the crock pot. Yay for my local grassfed beef farmer! 

I call this semi-homemade because I didn't make the noodles, I sent Alan to the store for them :-) But, by all means if you are ambitious enough to make your own, go for it! I cooked my store bought noodles into some bone broth I made (you can use canned beef broth but here's a great recipe for bone broth if you're ambitious) and then stirred a tablespoon of flour into a bit of water to add to the noodles after they were cooked to thicken the sauce. I then shredded the beef and added it and the veggies to the noodle mixture. Done! Yummy beef and noodles.

I can't believe I forgot to post this yesterday! If you follow me on Instagram then you already know why I haven't been around much, but if you don't (you should!) you'll just have to wait a few days :-)

E: No. Pinch your noggin.
C: Yes. I don't know.
