Inverted Cabbage Roll

Up until the last couple of weeks, we have been getting crazy amounts of cabbage in our CSA. Unfortunately, neither Alan nor I really like cabbage all the much. I was actually giving some of our cabbage to a co-worker because we just can't handle how much we were getting.

However, I finally found a recipe that we both liked and that used a lot of cabbage. Inverted cabbage rolls! It's like a cabbage roll but without the wrapping. Genius.

Inverted Cabbage Roll

1 lb sausage
1/2 or 1 head of cabbage, depending on size
1 green pepper, diced
1 onion, chopped
1 14.5 oz can of diced tomatoes
garlic, salt, pepper, oregano to taste

Cook sausage, then cook veggies til soft, add in tomatoes and spices

Enjoy!

Super, super easy.

Hope you all enjoy it as much as we do!

  3. I don't love cabbage either, but I can definitely get behind something that's like a wrapperless cabbage roll! My favorite way to eat cabbage is in cole slaw, but I can't eat but so much mayo-based salad before I start feeling totally greasy!

  4. I don't like cole slaw because I don't like mayo or vinegar. Alan does but I can't make it for him because I can't stand to even be around mayo!

  5. This just isn't up to Debby's mom's recipe. I'm still looking for something like that.....it was a sweet-sour type stuffed cabbage roll and I'd like to find an unstuffed version

  6. I don't know who Debby is :-) but I don't like sweet and sour anything. Good luck finding your recipe!
