Monster Cookies

A few weeks ago, I posted about several things I had cooked/baked lately. Due to the large positive response to my monster cookies, I decided to post the recipe. Enjoy!


Monster Cookies

2 c butter (I used 1 c butter and 1 c Earth Balance coconut spread
2 c sugar
1 c brown sugar
4 eggs (I used 2 eggs and 2 flax eggs)
4 c flour
4 c oatmeal
1 tsp salt
2 tsp baking powder
2 tsp baking soda
2 c M&M's (I used Easter M&M's)

Cream butter and sugars, add eggs and vanilla
Mix in dry ingredients
Add M&M's
Drop by tablespoonfuls onto cookie sheet lined with parchment paper and bake 8-10 minutes at 375

I used a recipe from my University of Evansville cookbook and added some ingredients to make them a little healthier.

  3. I'm sad that I won't be at the service to see them since we'll be in Louisville. But, I donated them to go to hospice/homebound members, which is something I know she would've approved.

  4. The daffodils in your yard are gorgeous. Yellow is such a cheerful color. And I think this is a wonderful new tradition!!

  6. Hahaha! Sorry! I love these because it's a basic oatmeal cookie recipe and you can add whatever you want to it. I made a batch last weekend with cranberries instead of m&m's. Yummy!

  8. They're all over the yard actually. We also have hyacinths, tulips, lilies, and lily of the valley, but none of those are in bloom yet. I planted some iris bulbs last fall too that are starting to come up...if Cecily doesn't trample them all down that is!

  9. My father-in-law just passed away... I will need to think of something special to remember him. He always wore red socks... I may start this tradition with my boys. My husband has already started. Problem is, it is hard to find red socks for grown men!

  10. Those do look delicious!! Unfortunately if I made some of those I would be the only one to eat them and that is never a good thing lol. Too many allergies in our house and oats is a big one :(

  11. Bummer :( The main reason I made them is because I've been trying to use up some conventional ingredients as we make the transition to gf/paleo.

  12. When we get our own place, I will have tulips and a red raspberry patch! My grandma always had tulips in front of her house and a raspberry patch behind the shed! I have so many wonderful memories of my grandma and I want to be able to pass those on.

  13. I know that this year is hard as you see everything blooming - but I hope you can get to a place where you see Easter lillies and they make you think of your grandmother and make you smile. Flowers are such a wonderful way to stay connected to those we love. I transplanted all of the day lillies from my Mom's and it's wonderful to know they will bloom at my house. I'm also jealous that you have a house with such great landscaping already done - our yard is still very much a work in progress.

  14. Tulips are one of my favorite flowers! If you ever get the chance to go to the Tulip Festival in Holland, MI go. Fields of tulips everywhere!

  15. Hopefully I will get there. I'm having a harder time with it this spring than I did at Christmas, which surprises me. And HAD awesome landscaping is the key word :-) We let the backyard go a little bit and dug out the rose garden and are in the process of creating an herb garden in its place. We moved in when I was pregnant with Cecily during a crazy heat wave so it kind of got away from us.
