Paleo Sausage Stuffing

I made this for Thanksgiving this year, but it can easily be made for Christmas, or any other occasion really. I absolutely love stuffing and can be kind of picky about it. Let's just say that this was a success. In fact, it is my new favorite stuffing recipe. Amazing! 


Paleo Sausage Stuffing

1 lb mild Italian pork or chicken sausage, casing removed
4 ½ cups mushrooms, diced
1 medium yellow onion, diced
6 celery stalks, diced
4 carrots, diced
1/2  cup chicken broth
1 tablespoon diced fresh sage
½ tsp minced fresh thyme leaves
½ cup dried cranberries, finely chopped
½ cup pistachios, chopped
½ tablespoon garlic powder
4 tablespoons olive oil
Sea salt and black pepper to taste

Preheat oven to 350. In a large soup pot, sauté onions in olive oil until translucent.  Add the sausage and brown.  Add the carrots, celery, mushrooms, chicken broth, cherries, almonds, sage, thyme, garlic powder, salt and pepper.  Mix well, bring to a simmer, and cook for 5-10 minutes or until the veggies begin to absorb the chicken broth.  Transfer to a large glass baking dish, cover tightly with aluminum foil and bake at 350 for 45 minutes.

The cranberries gave it just a hint of sweetness and the pistachios gave it a crunch factor. I didn't miss bread stuffing at all. Actually, I have discovered that since I started eating real food, my taste buds just explode with flavor from paleo dishes - most processed foods taste like cardboard or stale. You have got to add this to your holiday meal!

  2. I have tried a couple of paleo dishes now and they really aren't that bad. Most of the time you can't tell the difference. This looks yummy!

  3. When I would hear about others going paleo, I thought they were nuts and that they were doing it just because it is "the" thing to do right now. But, it is amazing and life changing for me. I cannot advocate enough about its benefits!

  4. Going paleo has been a life altering event for me. I suffered from debilitating joint pain, was bloated, lethargic, moody, you name it. All of that is gone. I have always been an advocate of real food, but this has been a true epiphany for me and I will never go back.

  5. I had never heard of anything about paleo before. I just looked it up. I can imagine that it would a wonderful way to start feeling great just by the foods you eat. I see no pasta or bread is allowed...aaahhh my downfall!! But this looks really good and I would def. try it...I like everything in it!

  6. It's hard at first, but once you get past that first week, it's so easy. When I eat something that's not paleo now, I can definitely tell the difference.
