I sauteed the Napa cabbage with some red pepper and onion then mixed it in with the sauce.
Asian Meatballs with Vegetables and Rice
1 lb ground beef
1 egg, beaten
1/2 c breadcrumbs
1 1/2 tsp curry powder
3/4 c vegetable broth
1 tbs butter
salt and pepper to taste
- Combine ground beef, egg, bread crumbs, curry, salt and pepper. Form into meatballs and place into greased baking dish. Bake at 450 degrees for 25 minutes.
- Transfer meatballs to skillet over medium-high heat (I transferred them to the skillet with the veggies I had sauteed). Add broth and bring to a boil. Continue to boil until liquid has reduced to 1/4 c. Stir in butter and pour over cooked rice.
