Chicken and Vegetables with Peanut Sauce and Rice Noodles

We joined a CSA this summer and we've been getting some interesting things every week, some of which I've never heard of! I love never knowing what we're getting and the challenge of figuring out what to do with what we get.

This last week we got some red rain. Never heard of it? Yeah, me either!


Red rain is a type of mustard green, with a milder taste than regular mustard greens. A lot of people put it in salad, but since we're not really salad people, I decided to throw it into a stir fry with some other CSA veggies over the weekend. It turned out really well!


Chicken and Vegetables with Peanut Sauce and Rice Noodles

2 chicken breasts, diced
1 bunch red rain, chopped
2 carrots, peeled and sliced
1/2 c broccoli, chopped
1/4 c red pepper, diced
1/4 c green pepper, diced
1/2 c boc choy, cut into thin strips

1/2 c hot water
1/2 c peanut butter
1/4 c soy sauce
2 tbs brown sugar
1/4 tsp cayenne
1 tbs lemon juice

1/3 box rice noodles

saute chicken and vegetables, then add peanut sauce ingredients to pan and mix. Cook rice noodles according to package directions then stir into peanut sauce and vegetables.
